Johnny Cakes

This is from my good friend Marli, whose idea it was to get me a GoSun for my birthday. The recipe is from her mom's collection of family recipes, converted to fit the GoSun. Essentially it's one third of the original recipe. She says she doesn't know why it is called "Johnny Cake", as it's a sweet cornbread. If you want it less sweet, reduce the sugar.

Ingredients

1/2 cup flour
2 tsp. baking powder
pinch of salt
1/4 cup cornmeal
1/4 cup sugar (scant)
2 tbsp. melted butter
1/3 cup milk
1 egg

Mix dry ingredients together in a bowl. Add milk and melted butter and mix it in. In a separate bowl, beat egg. Add egg to mixture, mix well.

This amount will fill 8 mini silicone loaf pans and fit perfectly into the GoSun Sport.

    1. It took about an hour and a bit. For the first 20 minutes or so I didn't have the mirrors properly directed. Once I repositioned them, it worked fine. So it probably took longer than it should have.
