Apple cake

INGREDIENTS
    1 cup flour
    1 tsp baking powder
    1/4 tsp salt
    1/2 tsp cinnamon
    1 stick (1/2 cup) unsalted butter, softened
    2/3 cup granulated sugar
    2 large eggs
    1 tsp vanilla extract
    3 tbsp dark rum
    2 apples, chopped
    1 tbsp maple syrup

INSTRUCTIONS

Line the tray of the Sport with parchment paper.

Peel, core, cut up the apples, and place in a bowl to soak with half the rum, the maple syrup, and the cinnamon. Mix thoroughly so all the pieces are coated.

In a small bowl, mix the flour, baking powder and salt.

Separate the eggs.

With a handheld mixer or a wooden spoon, cream the butter and granulated sugar until light and fluffy. Add the egg yolks one at a time, followed by the vanilla and the remaining rum. Mix well.

Beat the egg whites to stiff peaks using the mixer or a handheld beater.

Add the flour mixture and and the beaten egg whites alternately to the butter/sugar/egg yolk mixture until just combined. Use a light touch. Last but not least, fold in the chopped apples.

Bake in the GoSun until done. This could take anywhere between 40 minutes and an hour and a half, depending on conditions. When you see steam coming out and smell the deliciousness, you are almost there. Peek to see if it's done.

This could also be made with pears.
